Tabouli
This classic Lebanese dish is a great way to get more vegetable variety.
1 1/2 cups uncooked bulgur wheat 3 cups water 1/2 tsp. salt 1/2 cup fresh or frozen green peas 2 large tomatoes (chopped) 1⁄2 cups uncooked bulgur wheat 1 T. vegetable oil salt and pepper as desired 2 cloves minced garlic 1 bunch green onions (finely chopped) 1/2 cup chopped parsley Juice of 2 or 3 lemons 2 cups diced celery, radishes, and cucumber
Bring water and salt to a boil. Add bulgur wheat, remove from heat, cover, and let stand for one hour. Drain well and add the remaining ingredients. Blend well and chill for two hours.
Six servings: 200 calories, 8 grams protein each
