Eggplant Parmesan

1 medium eggplant (4 cups peeled and chopped)
1 cup chopped onion
6 T. seasoned bread crumbs
2 cups spaghetti sauce
1 tsp. sweet basil
3 T. grated Parmesan

Toss together: eggplant, onion, bread crumbs, spaghetti sauce and basil. Put mixture into casserole. Bake covered at 300 degrees for 40 minutes.

Sprinkle 3 T. Parmesan over top before serving.

Six servings: 64 calories per serving
