High Protein Pancakes

½ c. uncooked regular rolled oats
3 egg whites
½ c. non-fat cottage cheese
2 pkts. Splenda
1 tsp. vanilla
Dash of nutmeg
Dash of cinnamon

Combine ingredients and blend. Use non-stick pan or use small amount cooking spray and cook until done.
The texture is not quite as "fluffy" as regular pancakes, but you can make them a little fluffier by adding ¼ tsp. baking soda and ¼ tsp. baking powder to the mixture.

Yield: 4 pancakes: 70 calories each, 9 grams protein each
