Black Bean Chicken Wrap
20 oz. raw chicken breasts (boneless, skinless, sliced in thin strips)
1/2 cup barbecue sauce
1 cup canned black beans (rinsed)
1/2 cup canned or frozen corn
1/4 cup light sour cream
4 leaves romaine lettuce
4 10-inch whole wheat tortillas (150 calories each)
1 or 2 limes cut into wedges
Brown chicken in a non-stick skillet over medium heat. Add BBQ sauce, beans, corn and sour cream and cook until hot. Assemble by placing a lettuce leaf in the center of each tortilla. Top each one with 1/4 of the chicken mixture. Roll up and serve with a wedge of lime.
