Black Bean Slaw
4 cups grated cabbage
1 (15oz.) can black beans (rinsed and drained)
1 cup fresh tomatoes (cut up)
1 cup broccoli (cut up, very small)
2 T. low-calorie ranch dressing
Combine ingredients. Serve immediately or chill until ready to serve.
Serving suggestions: add salsa or other seasoning. You may also add seasoned, cooked and chopped chicken to make a quick complete meal.
Eight servings: 75 calories, 4 grams protein each.
