Santa Fe Stew
1 lb. super lean ground beef 4 oz. diced onion 5 oz. diced bell pepper 2 (15 oz.) cans black beans (rinsed and drained) 1 (28 oz.) can diced or crushed tomatoes 1 1⁄2 T. chili powder 1 tsp. cumin 1 tsp. oregano
Cook beef, onion, and pepper together over medium heat until meat is thoroughly cooked.
Add remaining ingredients and simmer for 10 minutes.
Four servings: 365 calories, 35 grams protein each serving
