Spinach Artichoke Dip
1 can (14oz.) artichoke hearts (chopped)
1 package (10oz.) frozen chopped spinach (thawed and drained)
3/4 cup (12 T.) grated parmesan cheese
3/4 cup non-fat mayonnaise
1/2 cup low-fat shredded mozzarella cheese
1/2 tsp. garlic powder or onion powder
1 small can water chestnuts
It is important to thoroughly drain the spinach. It takes awhile to defrost so consider taking it out of the freezer the night before.
Combine all ingredients and mix well. Place in a small baking dish. Bake at 350 degrees for 20 minutes or until it is hot and the cheese is melted.
One tablespoon: 20 calories, one gram protein
NOTE: if you use light mayonnaise it will be 30 calories per tablespoon
